Oyster Regal Or - Ireland

The Regal Or oyster is the queen of its category, with a very high fleshiness index, a strongly sweetened taste and a creamy consistency. It has a high mineral persistence on the palate which prolongs its pleasure, while the edible gold applied certifies its great value. This pearl of Northern Ireland forges and grows its wonderful mother-of-pearl in Bannow Bay, in the south of Ireland, where the Gulf Stream seems to want to split the island in two. Then in Westport it becomes even more meaty and dense. Here they find an ideal habitat for Regal oysters: very saline and with a high concentration of plankton.

Oyster Gillardeau - France

The Gillardeau family is an institution of French oyster farming, this product is considered the "Dom Perigon" of oysters. It is a family-run business located in Marennes Oléron, which for 110 years has been producing and selecting one of the most requested oysters by chefs from all over Europe. The meat is nutty, pulpy and succulent. Each sensation is balanced, the light sapidity is balanced by a unique sweetness of its kind.
